I love Tuscan Kale or Lacinato or Dinosaur Kale (how many names can one veg have?!) usually make it agrodolce - adding a little balsamic and sugar at end of cooking. Sometimes with bacon sometimes w/o.

I know about caldo verde...

We just picked up some Red Russian Kale at one of our last farmer's market.

Just wondering if anyone has any additional ideas or recipes?
