I am posing a challenge:

Can you make a meal for at least 2 people with 5 ingredients or less (I am not including salt and pepper as ingredients)?

I am all about the simplicity of food and it's natural taste.  I think today too many people have been misguided into thinking that the processed, over spiced food they buy at the supermarket is how food is actually supposed to taste.

Please post yours best 5 ingredient or less recipe to show everyone just how simple it can be to have delicious food!

Here is mine, my boyfriend happened to stumble across this and we fell in love with it's simple flavors and sheer uncomplicatedness (I am not sure if that is a word or not but I am going with it)

Fantastic challenge!  I have posted a series of 4-ingredient meals at Mary's Kitchen.  We also love simplicity!

Creamy Chicken Pasta  *Even though I'm not eating meat anymore*Spruced up Oatmeal

Veggie Pasta  *One of my favorites!

Asparagus and Eggs

Hi, Appleblossom! I just made this last night (5 ingredients, 5 minutes): fresh pasta with fiddleheads, goat cheese, and prosciutto. Thanks for the challenge!

New Recipe:  Beef Tip with Morels and Wild Ramps

I don't have amounts because they can be adjusted for your family:

Flank Steak ( I used approximatly 1.25 steak cut into 1x1 cubes)

Morel Mushrooms (I used 1 lb for 2 people but i love mushrooms)

2 cloves of garlic, minced

1 wild ramp (leeks), diced

2 tbls butter

Put the butter in the pan and melt.

Once melted sautee the garlic for about 2-3 minutes (don't burn otherwise it will taste bitter)

Place everything else in the pan and cook until the meat is fully cooked and the wild ramps are kind of transparent (in the eye of the beholder)  I go till most of the moisture from the morels has been cooked off.

Season with salt and pepper to taste.

can be served with rice or pasta and probably even mashed potatoes-  I don't eat most carbs so I just eat it as a meal.

Ooh, Appleblossom. I'm adding this to the Finding Morel Mushrooms 101.

This is a favorite around here. I've started making my own Enchilada sauce from an Allrecipes.com recipe I found, which follows.

Easy Bean and Cheese Enchiladas:

1 can (pint) refried beans

8oz shred cheese

1/4 c. Onion chopped

4 flour tortillas

Enchilada Sauce (homemade, recipe follows)

Simply mix beans, half the cheese and onions in a mixing bowl. Fill each flour tortilla with 1/4 mixture and fold in thirds as you would a burrito. Place enchiladas in a baking dish. Pour your pre-canned sauce over the enchiladas and sprinkle with the remaining cheese. Bake on 350 degrees for 20 minutes or until cheese is thoroughly melted. Serves 4. (Serve with shred lettuce, green onion, tomato and sour cream garnish if desired)
