Hard cheese question,
Do any of you dabble with mixing your starters? I've some MD088 that I have mixed in with my farmhouse cheddar starter, was wondering if you mix starters if you need to decrease the amounts required by the recipe, or is it the same amount of both. I use my own pasturized goats milk and just used a pinch of the MD088 instead of the dash required, along with the FHcheddar starter, just trying to get a touch of the buttery taste without the bubbles.
my folks are just starting to learn about cheese making and by trial and error they are trying to make mozzarella. So far, they weren't satisfied with the final result and they are wondering if you increase the amount of milk do you increase the amount of rennet and citric acid as well? or do you increase only citric acid?
