I would probably consider packing a lunch with an ice pack into a thermal baggie, and saving the PBJ for backup. I like cooking Japanese style Bento lunches to go, if I have a long day, and often, they're meant for eating at room temperature. Even if you're not into making "Japanese" food, you might catch some ideas on how to plan easy portable meals.

Thank you all  for all of the suggestions! I have been just throwing some sandwiches in a bag or my jacket pocket as I'm leaving the house. lol. I like the granola bar idea and picked up a few things today. and when i can afford it I'll pick up one of those thermal bags or a nice cooler. also that website with the meatless meals is amazing, I actually saved all these links. I'm so glad I found this and asked! Thanks!
