Deer eating tomatoes

Cucumber Salsa in my CSA box

My CSA box (next one due tomorrow afternoon) has had some beautiful cucumbers and tomatoes.   

Cucumber Salsa:

2 cups finely chopped seeded peeled cucumber

1/2 cup finely chopped seeded tomato

1/4 cup chopped red onion

2 Tbsp minced fresh parsley

1 jalepeno pepper, seeded and chopped

4-1/2 tsp minced fresh cilantro

1 garlic clove, minced or pressed

1/4 c reduced-fat sour cream or non-fat Greek yogurt

1-1/2 tsp lemon…

My Favorite Sausage & Tomato Soup

Sausage $Tomato soup


Serves about 8-10


3 Tablespoons olive oil

1 large onion, chopped

2 cloves garlic, minced

½ cup sliced celery

1 lb Polish Kielbasa cut into bite size pieces  (or smoked sausage or sweet Italian sausage or turkey sausage work well – omit altogether for vegetarian.)

4 28-ounce cans whole tomatoes and liquid (I’ll use 4 quarts of home canned tomatoes)
