Making Unsweetened Jam

I have been experimenting with unsweetened jams. For me, unsweetened means truly unsweetened, no sugar and no synthetic sweeteners. I have been able to successfully make a few varieties of freezer jam by simply cooking down whichever fruit I like, and sweetening it by adding a peach or an apple, and it has been working OK... A bit about me:
I just got my first home this year and have been frantically trying to make my .75 acres into the self-sufficient paradise that I have always wanted. My 5 year plan is to transform my micro-climate with trees and shrubs, establish a perennial garden that I can fill in with annual veggies, and experiment with cobb and straw-bale construction to build myself a potting shed/ glass house.
Latest greatest meal cooked at home:
Spaghetti squash (from my garden) with fresh marinara made from homegrown tomatoes, onions and herbs.
