Taco Rice Tortilla Pizza

I admit I need nights off sometimes--don't we all? But I hate, hate, HATE to waste food even if I don't feel like cooking.

Creamy Avocado Enchiladas

More anticipating-the-start-of-CSA-season-freezer-raiding here!

I whipped up a cheesy rich gooey enchilada dish using Hatch chile and bell peppers I'd put up last Fall plus ripe avocados.  For me, the biggest reason why I can't be 100% local is avocados.  And olive oil.  And tea.  And bananas.  And --- heck, the list is so long--but avocados top it.  …

Overnight Yeasted Carrot Waffles

As I wind down the stores of veggies I'd put up last Fall, when the weekly CSA farm share delivery was a routine--not like I'm desperately anticipating these days--I had extra carrots.  Crazy, right? When we eat them with dips, in tacos and meatloaf and burgers and stew . . . and the sweet farm carrot tops are a particular favorite of Crystal the composting guinea pig.

Cheater Margarita Smoothies

A quickie for Cinco de Mayo or really an all summer long drink--I freeze berries when they are ripe, and blend them up with bananas, peaches, whatever else I've got in the freezer to make these smoothies.

Avocado Lemon Feta Yogurt Dip

I love creating new ways to enjoy vegetables as appetizers.

I thought this would be an interesting one for Cinco de Mayo--and adding red and green peppers would echo the colors of the flag in a yummy way.
