Green Tomatoes: Do Something With Them!

It pains me to see folks piling their spent tomato plants, laden with green tomatoes, at the curb for yard waste pick up. I'm glad to participate in this round up of 65 Recipes for Using and Preserving Green Tomatoes over on Reformat.... I've highlighted some of my own blog posts below.

Look, you don't have to go all the way to making Green Tomato Bacon Jam to store in your freezer if you don't want to. But for heaven's save utilize the goldmine that is a green tomato on the vine as frost approaches.

If ya choose to make GTBJ my recipe is here. Once made, it stores in the freezer for months and when thawed, in the fridge for weeks. I use it in burgers and sliders because really that's my favorite way to eat it. [And I've got a lot of beef in the freezer from the cow share.]

Would you like to make chili instead? I have 2 kinds of green tomato chili recipes--one using beef and one using pork.

What about a pizza? My Deep Dish Green Tomato and Goat Cheese pizza was inspired by a sandwich with similar flavors.

How about a slow cooker curry? My recipe uses a buttercup squash from my CSA farm share in addition to those lovely green tomatoes. You can find it here.

Finally, the vintage green tomato recipe that started me down this road: Cabin Casserole from my 1950 Betty Crocker Cookbook. I fixed it for the family this Fall and got better photos of the finished dish.
