I'm an aspiring butcher, rugged meat thinker, and the owner of the Portland Meat Collective, a one-of-a-kind meat school and culinary resource that has changed the way citizens of Portland, Oregon think about their food, their community, and their local economy. For each Portland Meat Collective class, local farmers sell whole animals to students who in turn learn from local butchers and chefs how to transform those whole animals into everything from pork chops to bacon. Students go home with a lot of good meat and a lot of very rare knowledge. Chefs and butchers have the opportunity to share their art. And farmers are able to sell their animals directly to consumers who truly appreciate their humane and sustainable farming practices. The result? A growing community of informed omnivores who are rethinking meat consumption and production in America.

Hi, Camas. Welcome to HOMEGROWN! My name is Jennifer, and I'm the flock tender here: site updater and tweaker, feeder and waterer of content. I’m so glad you found us. The Portland Meat Collective: So. Stinkin. Cool. I’ve heard of you guys before, but I’m very pleased to make your acquaintance and am even more pleased to have you as a member here on HOMEGROWN. In fact, I’d like to pick your brain a bit and see if I might be able to enlist you to write a meat-centric HOMEGROWN 101, maybe on butchering a hog? Or just a couple of cuts? Let me know if you’re at all willing—or even a little bit curious—and we can chat. Elsewhere on HOMEGROWN, you can always find the latest additions to the site at the top of the homepage, and if you’ve ever got questions, please don't hesitate to leave a comment on my profile page or shoot me a message. I hope you feel right at home!
Hey there, Camas. Thanks for being here! I was blissfully offline on Friday and am just playing a little bit of catch-up this morning, but I'll get back to you shortly with thoughts on something meat centric you might be able to write up for the sight. More soon—and, in the meantime, thanks!
